Whenever I make pound cake (or anything else that calls for a juicy strawberry topping), I use this recipe for macerated strawberries. I didn’t know that “macerated strawberries” was the name for it until recently, haha. It’s so easy and delicious- the perfect quick strawberry topping.
Basically, macerating the strawberries (or your berries of choice) is the process of taking an ordinary bowl of sliced strawberries and magically transforming them with a little sugar. After stirring in the sugar, the juices will begin to form almost immediately, the natural flavors become more prominent, and the strawberries will soften slightly. My favorite part is the juice! It’s not too much–it’s just the perfect amount for an amazing strawberry topping.
How to make Macerated Strawberries
- First, wash the strawberries and hull the strawberries. Then, slice them up!
- Put them in a bowl with a couple of tablespoons of granulated sugar. You can adjust the amount of sugar to your taste as well as based on the amount of strawberries you are using, and how tart they are. If your strawberries are extra tart, you may even want a little more.
- The juices will start to form almost immediately after gently stirring the strawberries and sugar. Allow to sit for about 30 minutes. After that, I cover the bowl with plastic wrap and let the magic continue in the refrigerator. The longer it sits, the more time the juices will have to form, and the strawberries to soften. Yum!
Macerated Strawberries make the BEST topping for all sorts of things from pound cake (my favorite!) to ice cream, pancakes, yogurt, and more! This quick and easy little technique is just too easy and too delicious not to whip up now and then. Yum!

Simple Macerated Strawberries make the perfect sweet & juicy topping for pound cakes, ice cream, and more!
Ingredients
- 1 pound of strawberries (adjust to your liking)
- 2 Tablespoons Granulated Sugar
Instructions
- Wash, hull, and slice your strawberries
- Add 2 Tablespoons of granulated sugar to a bowl of sliced strawberries and stir to coat. (You can add a little more if your strawberries are very tart)
- Juices will begin to form almost immediately. Allow to sit for about 30 minutes, then either use or cover and place in the refrigerator.
Notes
Refrigerate this topping and use within a day or two. I usually make this on the day that I want to use it. Enjoy!
